1 SMALL CAULIFLOWER
OLIVE OIL (FOR COOKING)
SALT & PEPPER - TO TASTE
1/2 LEMON (JUICE)
1 1/2 CUPS UNSWEETENED OAT MILK
PARSLEY - GARNISH
1 BOX PURPLE SWEET POTATO AND MILLET SPAGHETTI


1. Break up a small cauliflower head and place on a parchment lined baking sheet. salt and pepper to taste then drizzle olive oil, rub over it to fully cover the flourets then bake at 400° for 20 minutes.
2. Blend the roasted cauliflower with the rest of the indgredients to form a paste. it will be about the consistency of hummus.
3. Cook the noodles per package instructions. Reserve some pasta water.
4. Add the sauce to the pasta and thin to desired consistency with a bit of the pasta water.
Garnish with parsley and enjoy.
