Ingredients

1 can chopped clams (drain and reserve the juice)

2 tbsp butter

1 tbsp minced garlic

1/4 cup white wine or sake

Black pepper, to taste

Red chili flakes (optional, to taste)

1/4 cup chopped Italian parsley

Millet Angel hair pasta (cooked per package instructions, reserve some pasta water)
Instructions

Cook the pasta

Boil angel hair pasta according to package directions.

Reserve some pasta water before draining.

Prepare the clam sauce

In a skillet, melt butter over medium heat.

Add minced garlic and sauté for 30 seconds until fragrant.

Stir in white wine (or sake), reserved clam juice, black pepper, and optional red chili flakes.

Simmer on low heat until the sauce reduces by half.

Combine pasta and sauce

Add cooked pasta and chopped clams to the skillet.

Toss gently to coat.

Add reserved pasta water 1 tablespoon at a time while stirring over low heat until the sauce reaches your desired consistency.

Stir in chopped parsley just before serving.
