Angel Hair Pasta with Clam Sauce

Ingredients

  • 1 can chopped clams (drain and reserve the juice)

  • 2 tbsp butter

  • 1 tbsp minced garlic

  • 1/4 cup white wine or sake

  • Black pepper, to taste

  • Red chili flakes (optional, to taste)

  • 1/4 cup chopped Italian parsley

  • Millet Angel hair pasta (cooked per package instructions, reserve some pasta water)


Instructions

  1. Cook the pasta

    • Boil angel hair pasta according to package directions.

    • Reserve some pasta water before draining.

  2. Prepare the clam sauce

    • In a skillet, melt butter over medium heat.

    • Add minced garlic and sauté for 30 seconds until fragrant.

    • Stir in white wine (or sake), reserved clam juice, black pepper, and optional red chili flakes.

    • Simmer on low heat until the sauce reduces by half.

  3. Combine pasta and sauce

    • Add cooked pasta and chopped clams to the skillet.

    • Toss gently to coat.

    • Add reserved pasta water 1 tablespoon at a time while stirring over low heat until the sauce reaches your desired consistency.

  4. Finish & serve

    • Stir in chopped parsley just before serving.

    • Serve hot, optionally garnished with extra parsley or chili flakes.


Tips & Variations:

  • Add a squeeze of lemon for brightness.

  • Toss in some grated parmesan for a richer flavor (optional).

  • Use fresh clams if available, steaming them first and using their juice.
