What is Soba?
Soba is a thin Japanese noodle made from buckwheat. Soba noodles are made with mainly buckwheat flour. In the market, you can find varies soba noodles made with buckwheat flour with wheat flour. At Big Green Organic, we believe the lesser the ingredients, the better the product. We use only 100 % Organic Buckwheat flour to produce our buckwheat products. You can find the variety here.
Benefits of Buckwheat.
Buckwheat is naturally gluten-free, making it suitable for those with celiac disease. Despite "wheat" in its name, buckwheat is actually a seed and sometimes referred to as a ‘pseudo-grain’. Processed into groats, buckwheat has the appearance of small, nugget-type granules that can be used in the same way as rice.
Buckwheat has an enviable antioxidant profile, better than that of many common cereal grains like oats or wheat. Buckwheat is also rich in fiber, which your body cannot digest. This nutrient is good for colon health.
