  1. Cook Millet Linguine: Bring a large pot of salted water to a boil. Add the millet linguine pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of pasta cooking water, and set aside.

  2. Prepare Sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Add sliced green olives and cook for another 2-3 minutes.

  3. Deglaze Pan: Pour in the dry vermouth (or dry white wine) and olive brine, scraping any browned bits from the bottom of the skillet. Allow the mixture to simmer for 2-3 minutes to reduce slightly.

  4. Add Capers and Butter: Stir in the capers and butter until the butter is melted and incorporated into the sauce.

  5. Combine Pasta and Sauce: Add the cooked millet linguine pasta to the skillet with the olive and vermouth sauce. Toss well to coat the pasta evenly. If the sauce seems too thick, add some of the reserved pasta cooking water to loosen it up.

  6. Season: Season the pasta with red pepper flakes, salt, and black pepper to taste. Adjust the seasoning according to your preference.
