Qualities: Millet is rich in niacin, which helps your body manage more than 400 enzyme reactions. Niacin is also important for healthy skin and organ function. In fact, it’s such an important compound that it’s often added to processed foods to enrich them.
Common Use: Millet is considered lectin free. The lectin-free diet involves either reducing your intake of lectins or eliminating them from your diet. This may be beneficial for some people with food sensitivities. Lectins are present in most plant foods but especially high in: legumes, such as beans, lentils, peas, soybeans, and peanuts.
How to cook: fill a large stockpot with water and bring to a boil, add a pinch of salt and desired amount of pasta and return to a rolling boil, cook for 10 minutes or until desired texture. Separate the pasta gently with a fork during cooking to prevent clumping. Rinse it with cold water to firm up the texture.
Storage: keeps in a cool, dry, and dark location.
