Ingredients:

  • 1 pound beef sirloin, thinly sliced
  • 8 ounces sorghum rotini pasta
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Cook Sorghum Rotini: Bring a large pot of salted water to a boil. Add the sorghum rotini and cook according to the package instructions until al dente. Drain and set aside.

  2. Prepare Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the thinly sliced beef with salt and pepper. Add the beef slices to the skillet and cook until browned on both sides, about 2-3 minutes per side. Remove the beef from the skillet and set aside.

  3. Saute Onion, Garlic, and Mushrooms: In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Add the sliced onion and minced garlic to the skillet. Cook until the onion is softened and translucent, about 3-4 minutes. Add the sliced mushrooms and cook until they release their moisture and are browned, about 5-6 minutes.

  4. Make Sauce: Sprinkle the flour over the onion and mushroom mixture in the skillet. Stir to combine and cook for 1-2 minutes to remove the raw flour taste. Gradually pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.

  5. Combine Ingredients: Return the cooked beef slices to the skillet. Stir in the sour cream until well combined. Cook for an additional 2-3 minutes, stirring occasionally, until the beef is heated through and the sauce is creamy. Season with salt and pepper to taste.

  6. Serve: Serve the beef stroganoff over the cooked sorghum rotini. Garnish with chopped fresh parsley for a pop of color and added flavor.
