Ingredients:

  • 8 ounces sorghum macaroni pasta
  • 6 slices bacon, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Cook Sorghum Macaroni Pasta: Bring a large pot of salted water to a boil. Add the sorghum macaroni pasta and cook according to the package instructions until al dente. Drain and set aside.

  2. Cook Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate to drain excess grease. Reserve about 2 tablespoons of bacon grease in the skillet.

  3. Saute Onion and Garlic: In the same skillet with the bacon grease, add the chopped onion. Cook until the onion is softened and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

  4. Make Cream Sauce: Add the butter to the skillet with the onions and garlic. Once melted, sprinkle the flour over the mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste. Gradually pour in the heavy cream, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.

  5. Add Peas and Bacon: Stir in the frozen peas and cooked bacon into the cream sauce. Cook for an additional 2-3 minutes, until the peas are heated through.

  6. Combine Ingredients: Add the cooked sorghum macaroni pasta to the skillet with the creamy bacon and pea sauce. Stir to coat the pasta evenly with the sauce.

  7. Finish and Serve: Stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste. Garnish with chopped fresh parsley, if desired.
